Good Ol' Chicken Pie
Last evening, I decided to spend my Friday night making Bazza a wholesome Chicken Pie, after all a way to a mans heart is through his stomach– it was my first making a pie experience but with the help from Jamie Oliver, I thought it couldn’t be that difficult!! It’s all part of my ‘becoming a domesticated goddess’ plan (haha) - I actually enjoy cooking if you didn’t know (I’m actually a Jamie Oliver wannabe you see). Jamie Oliver says this is a "quick and simple" recipe. It took me 2 ½ hours (oh my gaaaaawd I hear you cry!). I was the same. Perhaps I’m a pretty slow cook so maybe it will be quick and simple FOR YOU.
Tweaks and swaps
I substituted the turkey for chicken instead and it all worked out brilliantly; I also scaled down the recipe to fill enough for 3-4 persons (I know BC has a good appetite but he’s currently watching his waistline :) Some of you may think that life's too short to be making your own pastry – I used the ready-made stuff. Jus-Rol all-butter puff pastry; it's top-notch. I added fresh garlic and some mushrooms too!
Served with peas and creamy mash. Job done!
Honest Foods
I realised the importance of good, honest foods. What is good ‘honest foods’? You ask. Honest Food is any food that is prepared with pride and served with respect for those that will eat it. It is simple real food and doesn’t have to be the fancy chef stuff. It may be only a bowl porridge, but if you serve it with love, then that is Honest Food.
Can I have more please?
Throughout my life, food has been a way of showing love for family and friends. It was true of my mum, and it is true of me. If you ever pop round to my mum’s, she’ll ask if you have eaten/or hungry? Even if you politely say no, she’ll still bombard you with edible delights! and welcome you to help yourself and take more.
Whether she (mum) had time to cook or not, she’d always try her best to make it a priority of hers to get us to sit down at the table to eat together. Nothing is more fundamental than nourishing those that are near and dear to your heart. You take it personally.
Nowadays everyone is so busy, people are cooking less and less, and so increasingly they turn to meals that someone else has made. A stranger. Which when you eat, doesn’t create the same emotional response as from someone you know – thus is graded “average’ or with ‘it fills me up so it’ll do!’ attitude.
The humble pie
Who doesn’t like a good ol’ pie, am I right? Pies are great fun to make and the perfect party food – they stay hot and you can just let your guests help themselves. They can be as humble or sophisticated as you wish and there's plenty of fillings, both sweet and savoury, to play around with.
